If you are a student of Yoga and/or Ayurveda, or just want to learn more about healthy, balanced Indian cooking, this is top notch source.

I found this book to be well written and clear. As someone who is new to Ayurveda with a healing need, I have been looking for several books dealing with the same topics...in this case, how to modify one's diet to reach better balance physically, emotionally and spiritually. The content expanded and re-inforced principles I found in other Ayurvedic cookbooks. I felt I have gotten a better sense of how to use various types of foods and seasonings through this book. Highly recommended!

 

 

  The Ayurveda Encyclopedia – Swami Sadashiva Tirtha

 

Although there is no shortage of books that attempt to explain Ayurveda medicine (a system that originated in India about 5000 years ago) to a popular audience, the author, instructor at the Ayurveda Holistic Health Center in Bayville, NY, claims that this is the first English-language textbook on the subject.

Perhaps the most useful information here is the list of Ayurvedic resources and the glossary containing clear definitions of many of the terms used.

  Ayurveda: A Life of Balance – Maya Tiwari

 

Because this book contains such a wealth of knowledge, it may take a while to really get into it. However, it is highly informative and certainly a good addition to any library, especially for those interested in holistic health.

Tiwari goes very much into the philosophy behind Ayurveda and the doshas, yet explains it in a way that the average reader can understand. She gives the best explanations of each dosha that I've ever read, going into aspects such as career and sexuality, diet, exercise, physical and emotional traits.

She then gives food charts for the 10 doshas, instead of the usual three doshas that most do. She lists foods that are beneficial, and those that are not.

I find this book to be wonderful, and very accessible to the casual reader as well as the experienced person very into Ayurveda.

  The Healing Cuisine: India's Art of Ayurvedic Cooking – Harish Johari

 

The best part of the book is the theory sections including the sections about ingredients which includes summaries on the qualities & health benefits of different foods. There is information about other ingredients, like tomatoes, grapefruits, turnips, carrots, lemons, potatoes etc.. & particularly interesting the information about spices.

The recipes are interesting in that some use vegetables like celery & broccoli which are readily available in a western grocery yet previously uncommon to Indian cooking. Also the recipes are health conscious with greater use of ghee rather than oil, and jaggery in sweets instead of refined sugar. Many recipes are run of the mill home-style north Indian cookery which is good for the newcomer to north Indian cooking

This is the one of the only books that is a vegetarian Indian cookbook based directly on ayurvedic science, with a complete introduction to ayurvedic theory and application—and it's vegan-friendly.
